This 12-layer Dried Apple Stack Cake was baked at the John C. Campbell Folk School during a week-long class taught by Mark Sohn on Appalachian Cooking.

Upcoming Classes:

Hearty Country Cooking – Savory Southern Favorites
Sunday, October 27 – Saturday, November 2, 2019
John C. Campbell Folk School
Brasstown, North Carolina

The name of this class is also the title of the instructor’s cookbook, published in 1996. You’ll receive a copy – and this is where we’ll get our recipes. Sample iconic Southern ingredients like black walnuts, cracklings, souse (in the meat family), and sorghum syrup. Work together to prepare some favorite Southern home-style dishes: deviled eggs, Mexican cornbread, barbecued baby-back ribs, chow chow, banana cream pie, and apple butter. Some kitchen experience is helpful.
